Carrot Poriyal

Ingredients:

 1 cup frozen carrot cubes 
1 tablespoon oil
½ teaspoon mustard seeds
½ teaspoon cumin seeds
1 dried red chili (broken)
5-6 curry leaves

1 green chili (chopped)
1 small onion (finely chopped)
¼ teaspoon turmeric powder
Salt to taste
2 tablespoons grated coconut
1 tablespoon chopped coriander leaves

Step by Step Recipe

Heat oil in a pan, add mustard seeds, cumin seeds, dried red chili, and curry leaves.

Once they splutter, add onions and green chili, sauté until soft.

Add frozen carrot cubes, turmeric, and salt, mix well. Cover and cook for 5-7 minutes, stirring occasionally.

Enjoy your meal with love.!

Once cooked, add grated coconut and mix well.

Garnish with coriander leaves and serve hot with rice and sambar.
